Banana Nut Baked Oatmeal

I'm a very routine person. And, a part of that routine is to get up early (yes, I'm a major morning person), exercise, and eat breakfast before work begins at 8:30 AM. So, I'm a huge fan of a meal prepped breakfast I can grab and go and get to work. This banana nut baked oatmeal could not be easier - one bowl, one long bake, and makes enough for more than a week!


Prep Time: 15 minutes

Cook Time: 2 hours

Total Time: 2 hours 15 minutes

Makes: 9 servings


Ingredients:

1 3/4 cup unsweetened almond milk

1/4 cup honey

2 bananas, mashed

1 egg

3 cups old fashioned oats

1 tsp baking powder

3 tsp ground cinnamon

1 tsp vanilla extract

1/4 tsp kosher salt

1/4 cup chopped walnuts


Directions:

  1. Preheat the oven to 350F.

  2. Mix all ingredients except the walnuts in one large bowl until fully combined.

  3. Line an 8x8 baking dish with parchment paper and fill with the oatmeal mixture. Top with walnuts.

  4. Bake for 2 hours and allow to cool completely at room temperature before slicing into 9 equal pieces.

  5. Store in a Tupperware in the fridge for up to 2 weeks.
