Chilled Green Soup

Ingredients:

2 cucumbers, peeled & sliced

6 large basil leaves

3 tbsp parsley

2 stalks green onion

1 small avocado

1/2 cup water

2 limes, juiced

salt to taste


Optional Toppings:

- plain non-fat yogurt

- thinly sliced jalapenos

- dill

- red pepper flakes

- pesto


 

Directions:

1. Blend all ingredients - add salt to taste

2. Chill in fridge for at least 1 hour

3. Add additional water and/or lime juice to think if desired

4. Top with suggested toppings or whatever you have on hand!
