Cheater's Fig & Goat Cheese Galette
Lazy Sunday meant lazy baking! What's better than skipping several steps and still ending up with a decadent result? Super quick, super easy, and super delicious!

Ingredients:
1 frozen 9" pie shell (I used Wholly Wholesome Gluten Free)
1 lb fresh figs, sliced
5 oz goat cheese, softened to room temperature
2 tbsp honey
1/4 cup unsweetened coconut milk
Directions:
At least 30-minutes in advance, allow your pie shell to defrost to room temperature and soften.
Preheat oven to 375 F.
In a large mixing bowl, whip softened goat cheese and honey. Add coconut milk 1 tbsp at a time until desired thickness is achieved. The texture should be like thick yogurt.
Pour the goat cheese mixture into the pie shell and arrange the figs to lie flat in a circular formation.
Make cuts in the edges of the pie crust every 3 inches to make folding easier. Fold over the edges until galette is completely formed.
With scissors, carefully cut the pie tin in the same manner. Gently, push the edges to flatten - they will not flatten completely but this will make it easier to remove the galette after baking.
Bake for 35-40 minutes or until the pie crust is golden brown and the filling is bubbling. Allow to cool completely, slice, and serve.
