Dark Chocolate Orange Peanut Butter Cups

Oops!... I did it again! I've been feeling like I need more treats with all the fodmap restrictions and got to thinking of what I have and what peanut butter cup combos I could make. Plus, I haven't made peanut butter cups since sometime after Halloween so it seemed like it was time. Orange, dark chocolate, peanut butter, and vanilla - so simple and so good!


Prep Time: 15 mins

Cook Time: 15 mins

Total Time: 30 mins

Makes: 15 cups


What You Need:

2 tsp vanilla extract

1 tbsp orange zest + extra for topping

1/4 cup peanut butter

2 tsp pure maple syrup

1 pinch of salt plus extra for topping

10 oz Enjoy Life dark chocolate chips (or others if not avoiding dairy)

2 tsp coconut oil


What You Do:

  1. Combine the vanilla extract and orange zest and let sit for 30 minutes.

  2. Combine peanut butter, vanilla, orange zest, maple syrup, and salt. Mix to combine and set aside.

  3. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals until melted, stirring in between.

  4. To assemble, fill the molds 1/3 of the way with the chocolate mixture and spread up the sides all the way to the top. Put in the freezer for 5 minutes.

  5. Pull from the freezer and spoon about 1/2 tsp of the peanut butter mixture and top with chocolate, sealing the top. Top with orange zest and a pinch of salt. Return to the freezer for 10 minutes.

  6. Keep in an airtight container at room temperature or in the refrigerator to prevent melting. Enjoy!
