Mint Chip Mini Ice Cream Sandos

Mint. Chocolate. Cookies. Ice Cream. Magic Shell. What else could you need? This was one of the most fun recipes to put together for a next level sweet bite. If you're anything like me, you crave a small sweet after dinner or before bed. I'm usually eating frozen grapes or chocolate covered banana bites but who says you can't be a little extra? Use ingredients like Goodie Girl and they're even gluten free! Prepare them ahead of time and pop them in your freezer for those future cravings.


Prep Time: 10 minutes

Cook Time: 2 hours

Makes: 12 mini ice cream sandwiches


Ingredients:

1 box Goodie Girl Mint Cookies (or 24 thin mint cookies)

1 pint mint chip ice cream (choose high fat to avoid melting while preparing)

6 oz white chocolate chips

2 tbsp. coconut oil

green food coloring


Directions:

  1. Place 12 cookies top side down on a parchment-lined baking sheet.

  2. Using a tbsp. measuring spoon or melon baller, spoon 1 tbsp. mint chip ice cream on each cookie. Sandwich another cookie bottom down on top of the ice cream. Once all sandwiches are made and secure, place in the freezer for 30-minutes.

  3. After 30-minutes, prepare your chocolate by combining the white chocolate chips, coconut oil, and enough green food coloring to achieve a light green, mint color. Microwave in 30-second intervals until melted.

  4. Immediately remove the ice cream sandwiches from the freezer and carefully dip one half into the chocolate, allowing all excess to drip off before placing back on the parchment-lined baking sheet.

  5. Once all sandwiches have been dipped in chocolate, place in the freezer for at least 1 hour before eating. Enjoy!
