Spicy Nduja Spaghetti
Nduja - Calabria's gift to the world. A spicy, spreadable sausage made with Calabrian peppers. Here, in the most killer sauce that's to die for. Simple, quick, and delicious! A perfect comfort pasta as the temperatures continue to drop!

Ingredients:
1 1/2 tbsp extra virgin olive oil
1/4 yellow onion, minced
1 garlic clove, minced and ground into a paste
1/2 cup tomato sauce
3 oz nduja (I used Tempesta)
4 oz spaghetti (I used Barilla Gluten Free)
Reserved pasta water
salt and pepper to taste
Directions:
In a skillet over medium heat, add 1 tbsp olive oil and the minced onion. Stir frequently until onions are translucent and add the garlic paste. Continue stirring for another 2-3 minutes until garlic is fragrant.
Add nduja to the onion and garlic and mix until the nduja is melted and bubbling. Add the tomato sauce, mix together, and season with salt and pepper to taste. Turn to low-medium heat and set aside.
Bring 8 cups of water to a boil and salt like the ocean. Add your pasta and cook until just before it reaches al dente - your pasta should still hold a firmness.
Transfer pasta directly into the nduja sauce, reserving the pasta water. Mix the pasta to coat with the nduja sauce and add one ladle of pasta water at a time until the sauce is coating the noodles and the pasta is cooked al dente - about 3 ladles. Continue to constantly stir during this process.
Add 1/2 tbsp olive oil, stir one last time, and season with additional salt and pepper to taste. Serve immediately and enjoy.
