Summer in a Jar - Easy Berry Jam
I know everyone is jonesing for autumn and peak fall foliage. I like a pumpkin spice moment as much as the next person. But I can't stop the Gulf Coaster in me from already missing summer. That's why I've captured summer in a jar, stashing away summer berries in the freezer since June for the easiest, tastiest mixed berry jam! Stay tuned to find out what this jam is destined for!
Prep Time: 10 minutes
Cook Time: 60 minutes
Total Time: 1 hour 10 minutes
Makes: one 16 oz jar
Ingredients:
2 lbs frozen berries (strawberries, blueberries, blackberries, blueberries)
2 cups sugar
2 lemons, juiced
2 pinches salt
2 tsp pure vanilla extract
1/2 cup water
Directions:
In a heavy-bottomed pan, dutch oven, or cast-iron skillet, combine all ingredients over low-medium heat for 40 minutes - 1 hour stirring occasionally.
At 40-minutes, begin checking the jam regularly to see if it is finished. To test, drop a teaspoon on a saucer. The jam is finished when it crinkles to the touch and has set. Be careful not to overcook the jam as it will be too thick and won't spread well.
Ladle your jam in a jar with a tight seal that has been boiled beforehand. Store in the fridge for up one month.
